Galinha a Zambeziana
The iconic East African dish of Galinha à Zambeziana (aka Piri-Piri Chicken) from Mozambique is a succulent feast of chicken cooked with coconut milk, lime, pepper and garlic, coconut milk with piri-piri sauce. It is traditionally served with Matapa, a dish of cassava leaves in peanut sauce. Zanzibari Biryanis and Pilaus are great food celebrations, based on rice and the exotic spices of Zanzibar. Another Zanzibar fave is Urojo, a yellowish broth with meat, chilli, mango, ginger, tamarind and lime. Matoke, one of the national dishes of Uganda, is a type of banana, harvested green, then cooked and pounded into various meals, and often served mashed. In Africa, you buy these dishes on the street. North African cuisine features Egg Brik, the national dish of Tunisia – thin, triangular, phyllo pastry (Malsouka) wrapped around a filling of whole egg, chopped onion, tuna, parsley and Harissa. This is the spicy paste is used in almost every – and usually spicy – Tunisian meal, it is made from chillies, garlic, lemon and a mix of caraway, cumin and coriander seeds. Kefta Mkaouara (aka Moroccan Meatball and Egg Tagine) is a traditional dish of small beef or lamb meatballs simmered in a spicy tomato-based sauce, with boiled eggs added in the last few minutes. Ful Madames (aka Stewed Fava Beans) is the national dish of Egypt – a delicious spicy stew of beans stirred with olive oil, lemon juice and garlic. Frequently eaten for breakfast (easily delivered through Just Eat).
